Wine is made by harvesting grapes, preparing the fruit, fermenting its juice or crushed fruit with yeast, then clarifying, stabilising, maturing, blending and bottling the result.
The crucial step is alcoholic fermentation. Yeast consumes fermentable grape sugar and produces alcohol and carbon dioxide, along with other compounds that influence aroma and flavour.
There is no single winemaking recipe. Grape condition, variety, region, vintage, intended style and producer decisions all shape the route from vineyard to bottle.
1. Harvest: choosing the grapes
Winemaking starts in the vineyard, where grapes are harvested when the producer considers them suitable for the intended wine. “Suitable” does not simply mean “as ripe as possible”. It involves a balance of sugar, acidity, flavour development and the condition of the fruit.
Grapes may be harvested by hand or machine. The timing can influence the eventual wine’s alcohol, acidity, flavour and balance, so it is one of the important decisions made before the grapes reach the winery.
In Australia, harvest timing is not the same everywhere. It varies with region, variety, season and vintage.
2. Sorting, destemming and crushing
Once the grapes arrive at the winery, they may be sorted to remove damaged fruit, leaves, stems or other unwanted material.
Destemming separates the berries from the stems. Crushing breaks the berries and releases their juice. These steps are common, but neither is universal. Some winemakers retain stems or use whole bunches when that suits the wine.
The mixture of crushed grapes, juice, skins, seeds and sometimes stems is often called must.
3. Pressing: separating juice from solids
Pressing uses pressure to separate liquid from grape skins, seeds and other solid material. When it happens is one of the clearest differences between the usual red and white wine pathways.
For many white wines, grapes are pressed early and the juice ferments with limited prolonged skin contact. For many red wines, crushed grapes ferment with their skins first and are pressed later, after colour and tannin have been extracted.
Rosé can be made by pressing red grapes relatively soon after crushing or by allowing a short period of skin contact first. These are typical patterns, not rules for every wine.
4. Fermentation: where sugar becomes alcohol
During alcoholic fermentation, yeast uses fermentable grape sugar as food. It produces alcohol and carbon dioxide, as well as other compounds that help shape the wine’s aroma, flavour and texture.
A winemaker may allow fermentation to begin with microorganisms naturally present on the grapes or in the winery. This is often called uninoculated, spontaneous or “wild” fermentation. Alternatively, the winemaker may add selected cultured yeast.
Selected yeast can make the process more predictable, while uninoculated fermentation can be more variable and may carry practical risks. Neither approach is automatically better.
5. Skin contact and extraction
When juice remains in contact with grape skins, compounds can move from the skins into the fermenting wine. This is called extraction.
For red wine, skin contact commonly provides much of the colour and contributes tannin, the drying or grippy sensation familiar from many reds. White wines are commonly separated from dark skins earlier. Rosé usually involves less skin contact than red wine.
These are broad patterns. Some wines use extended skin contact, whole bunches or other techniques, so colour alone does not reveal the entire production method.
6. Malolactic conversion, where relevant
After or around alcoholic fermentation, some wines undergo malolactic conversion. Lactic acid bacteria convert malic acid into lactic acid.
It is relevant to many red wines and some whites, but it is not required for every wine. It changes the wine’s acid profile, but does not automatically make a wine better or smoother.
7. Clarification and stabilisation
Young wine contains material from grapes, fermentation and handling. Some settles naturally. Other techniques can help make the wine clearer or more stable before bottling.
Clarification may involve settling, moving wine away from sediment, fining or filtration. Stabilisation aims to reduce unwanted deposits, haze or microbial problems after bottling.
A clear, filtered wine is not automatically better than a wine handled with less clarification, and an unfiltered wine is not automatically more authentic.
8. Maturation and the choice of vessel
Some wines are released relatively soon. Others mature for a period in stainless steel, oak, concrete or another vessel.
Oak can influence structure and flavour, depending on factors including its age, origin, toast, size and contact time. Stainless steel offers a non-porous environment and useful temperature control. But a vessel does not automatically create one flavour: oak does not always mean vanilla, concrete does not always mean “mineral”, and stainless steel does not guarantee a fruit-driven wine.
Not every wine is matured in oak. Oak is one option, not a compulsory stage of quality winemaking.
9. Blending for balance and style
A producer may blend wines from different varieties, vineyards, parcels, vessels or fermentation lots to shape balance, style or consistency.
A blend is not necessarily hiding something. It is simply one tool available to the winemaker. In Australia, claims about variety, vintage and geographical indication are subject to blending and labelling requirements.
10. Bottling and further development
Before bottling, wine may receive final clarification, filtration, stabilisation and quality checks. Some wines are intended to be enjoyed soon after release; others may continue developing in bottle.
Bottle development does not mean every wine improves with age. It depends on the wine, closure and storage conditions.

In traditional-method sparkling wine, a second fermentation takes place in the bottle. Other sparkling wines use different methods, so “sparkling wine” does not always mean the same production sequence.
Dry, sweet and residual sugar
Yeast may consume most, but not necessarily all, of the available grape sugar. Sugar remaining in the finished wine is called residual sugar.
A wine with little residual sugar may be described as dry. Perceived sweetness is also affected by acidity, alcohol, flavour and serving conditions, so residual sugar matters but is not the only thing you taste as sweetness.

Skin contact helps explain why many reds have colour and tannin, while limited contact helps explain rosé’s lighter appearance. The most important idea is that wine is not made by one fixed formula. It is the result of grapes, yeast, time and a series of decisions from harvest to bottle.
