Growing and harvesting grapes

Grapes are an agricultural raw material, so the wine’s story begins with how they grow. Grape variety, weather, climate, vineyard site and ripeness all affect the fruit that arrives at the winery.

Harvest timing is a decision rather than a universal rule. A producer may balance sugar, acidity, flavour development, colour, tannin and the intended wine style.

Crushing, destemming and pressing

Grapes can be crushed or destemmed, pressed as whole bunches, or left partly or wholly intact. Pressing separates juice from solid grape material. Crushing breaks the fruit and releases juice, while destemming removes some or all of the stems. These steps are not mandatory in every wine.

Skin contact and maceration

Grape skins contain colour compounds and other phenolic material. Maceration means keeping grape solids and liquid in contact so compounds can be extracted. The amount and timing of skin contact can change colour, flavour, texture and structure.

Fermentation

Fermentation turns grape juice into an alcoholic beverage. Yeast converts fermentable grape sugars into ethanol, the main alcohol in wine, and carbon dioxide. It also produces other compounds that contribute aroma and flavour.

Some wines use selected yeast cultures, while others rely on spontaneous fermentation from yeast present in the grapes or winery environment. The beginner-level idea is simple: alcohol is generally created during fermentation rather than added to ordinary wine.

Maturation and other treatments

Fermentation is not necessarily the end of winemaking. Wine may be held in stainless steel, concrete, oak, glass-lined tanks or other vessels. It may spend time with lees, the solids that settle after fermentation, including yeast cells and other grape or fermentation material.

Wine may also be clarified, filtered, stabilised or blended. Maturation does not automatically mean oak ageing. Oak is one possible vessel or influence, not a requirement.

Carbonation, fortification and packaging

Some wines contain dissolved carbon dioxide, giving them bubbles. Fortified wines have alcohol added during or after fermentation. Fortified wine is not automatically sweet: sweetness and fortification are separate characteristics. Finally, wine is bottled or otherwise packaged and may be stored before release.

Why do wines look and taste different?

Wine’s character usually comes from several influences working together rather than one factor acting alone.

Grape variety, ripeness, climate and site

Different varieties have different combinations of sugars, acids, colour compounds, tannins and aroma precursors. As grapes mature, these components change. Temperature, sunlight, rainfall, altitude, exposure and other site conditions also influence vine growth and grape development.

The same variety can therefore produce different wines in different vineyards or under different winemaking approaches.

Skin contact, fermentation and maturation

Skin contact is one of the clearest reasons wines differ in colour and structure, but its effects depend on timing, temperature and duration. Fermentation conditions, vessel, oxygen exposure, time and post-fermentation treatments can all affect character. Oak and lees contact may influence flavour, texture and integration. Neither guarantees better wine.

Blending

Blending combines wines or components, including grape varieties, vineyard parcels or vessels. It is not evidence of poor quality, just as a single-variety wine is not automatically superior. It is one way to shape balance and style.

Sweetness, acidity, tannin, body and alcohol

A wine can smell strongly of ripe fruit without being sweet. These structural elements interact in how the wine feels.

The main types of wine

These categories are useful for orientation, but they are not one complete universal legal classification. Colour, sweetness, carbonation and fortification describe different dimensions, so categories can overlap.

A wine can be white and sweet, red and sparkling, or fortified and sweet. “Sparkling” describes bubbles while “sweet” describes a characteristic mainly associated with residual sugar. “Dry” generally means low or barely perceptible residual sugar. It does not necessarily mean non-fruity, highly acidic or better quality.

Under Food Standards Australia New Zealand requirements, beverages containing 0.5% alcohol by volume or more must include alcohol-content information; beverages over 0.5% must include a statement of standard drinks; and alcoholic beverages over 1.15% must generally carry the prescribed pregnancy-warning label, subject to the Food Standards Code and applicable exceptions.

Terms that need care

Natural wine

“Natural wine” does not have one universally accepted definition. It should not automatically be described as wine with nothing added, or as healthier, more authentic or better.

Traditional

“Traditional” may refer to a method, region, vessel or historical practice. It is not, by itself, a guarantee of quality or minimal intervention.

Old World and New World

These broad informal groupings can oversimplify the diversity of wine regions and producers. They are not necessary to understand the basic definition of wine.

Amber or orange wine

Amber or orange wine is generally made from white grapes using red-wine-style techniques, including fermentation with skins, seeds and sometimes stems. It is not simply white wine that has accidentally oxidised.
